So, I got a free pumpkin. I decided to go ahead and cook it so I could use it for something. Here's the process.....

I'm thinking of trying to make Pumpkin Empanadas.
Any suggestions????? We're tired of pumpkin pie.

My stepdad used to work at a bakery. Talk to him about pumpkin empanadas...and freeze some then fedex some to me...along with my Christmas presents!! ;oD
